Buchu kimchi is one of Korea's traditional kimchi varieties, made primarily from chives as the main ingredient. Chives, similar to green onions, possess a distinct aroma and flavor. After thoroughly washing the chives, they are cut to an appropriate length and soaked in salt water for fermentation. Then, they are seasoned with spicy red pepper flakes, minced garlic, minced ginger, salt, sugar, and left to ferment.
Buchu kimchi is typically spicy with a rich soy sauce aroma, and vinegar may be added to adjust the sourness. Once fermented, it is stored in the refrigerator for optimal consumption. Buchu kimchi is commonly used as a side dish or in dishes like kimchi stew, and its unique savory flavor and aroma enhance the taste buds of many.
