Enchiladas de Mole
Three tortillas stuffed with Tinga de Pollo (Chicken), cheese, or Vegan Papas con Chorizo (Tofu marinated in a spicy salsa and cooked with potatoes); topped with Mole. Served with refried beans and rice on the side. Topped with sour cream, onions, and crumbled cheese.
