Destemmed and left on the skins to start a native yeast fermentation, then after 5 days pressed to finish fermentation and aged in neutral French barrels. The 5 days of skin contact impart a copper hue, reminiscent of Italian Ramato. The taste is uniquely its own, landing somewhere between an orange wine and a rosé.Fun and fresh, with lingering savory notes. A wine as unique as our Dolce. 12.3% ABV750 mL bottleBiodynamicThe WineDue to lower yields in Oregon in 2020 and the impact of severe fires in September, we had to be flexible in our winemaking decisions this harvest. We worked with Johan to help with changes from their farm, and bought more Pinot Noir and no Chardonnay. We also decided to allocate 10% of our Chenin Blanc from Tuckaway Vineyard (Elkton AVA, 100% organic) to this pét-nat. This was our first year working with Tuckaway Chenin Blanc and we’re hooked.Pinot Noir grapes were handpicked the morning of October 5 and Chenin Blanc grapes were handpicked on October 7, whole cluster pressed, and the juice was hyperoxidized. After settling, the Pinot Noir juice was racked off the gross lees into 100% NOVUM amphorae where fermentation began spontaneously. Same for the Chenin Blanc, but into a concrete egg. As primary fermentation was finishing, the pinot noir and chenin blanc were blended in tank and racked off of fine lees then chilled to halt fermentation.

16 oz can. 7.5% ABV. DESCRIPTION: Incorporates the 2020 Veterans Hop Blend ... which boasts some serious fruitiness. Aromas of pineapple, mango, melon and tangerine. Bitterness is balanced, light but lingers on the pallet.

2017. 750 mL bottle. 13.5% ABV Deep, almost pinkish, onionskin color typical of Pinot Grigio from Friuli. The nose reveals a powerful floreal note, with a touch of tropical fruits in the end. Shades of clay and gypsum typical of the terroir are also present. It tastes full bodied and fresh with a great structure given by the maceration that matches very well with the acidity and salinity in the aftertaste. Half of the fruit is cold-macerated before fermentation at controlled temperatures in stainless steel. The other half was left on the skins for four days.

2017. 750 mL bottle. 12.5% ABV. Neat, straw yellow with lemon iridescence. On the nose, medium intensity of pear-style white fruit and hay final notes. On the palate, nice with some Atlantic Ocean salt; jasmine and apple after notes.

The Sauvignon Blanc macerates on the skin ffor 48 hours, and the Semillon and the Chenin are directly but progressively pressed. Fermentation occurs spontaneously with native yeast. 20% aged in 4 year-old barrels for 6 month with no top-offs. All of the wine is age on fine lees. Unfined & Unfiltered. Sulfites: 45 mg/L

Sulfites: No SO2 added.

1L bottle. 16.5% ABV. Made with white wines from selected Italian grape varieties from the Romagna, Puglia and Sicily regions, processed within 24 hours of receiving to prevent oxidation. These wines have a medium alcoholic strength that, in combination with the special production processes, brings out the flavors of the spices, herbs and roots that make up the secret recipe.

750 mL bottle "Velue" is the old name for Velm-Goetzendorf, the name of the old willow trees, which grow near the river. The Velue wines are nature-based and fermented spontaneously inside stainless steel tanks. The Velue Riesling is originated from the area Haidthal. The eastern-facing slope of the Haidthal provides ripe aromas and minerals. The grapes of this wine are harvested by hand and carefully selected. After a short maceration time the Velue Riesling becomes spontaneously fermented at 23-25°C inside a steel tank. malolactic fermentation with battonage for 5 months on the lees. Unfined, unfiltered.

Beautiful natural/biodynamic pinot gris / orange wine from Niederosterreich, Austria. 2019 vintage. 750 mL bottle, 13% ABV. From the winemaker: Graupert Freedom in the vineyards. The Grauburgunder (or Pinot Gris) vines present an exceptional challenge for us. We choose not to prune the vines, giving them the total freedom to grow and climb according to the vines’ basic instincts. The vines are able to develop completely freely according to their metabolism. We no longer disturb them by pruning them back, and they regulate their yield themselves. This leads to an above-average amount of grapes to ripen as very small berries, yielding a harvest which is smaller than usual as a result. The significant advantage of this is that the small berries have a higher skin-to-pulp ratio, therefore also providing more aroma, extract and complexity in the wine. And because the vineyard looks completely unkempt, we named it “Graupert”– a word from the Burgenland dialect which older people use to describe someone slightly scruffy-looking.
